Low Carb Ice Cream Recipe: Sugar Free Ice Cream That Actually Tastes Like the Real Thing

In short

A proper custard-style ice cream with no added sugar: full-fat milk, heavy cream, six egg yolks, vanilla and Lakanto (monk fruit/erythritol). Churn it in an ice cream maker, or freeze it and whisk every 30 minutes if you don’t have one.

  • Ingredients: 1 cup full-fat milk, 2 cups heavy cream, 1 cup Lakanto (or your preferred monk fruit/erythritol blend), 6 egg yolks, 1 tsp vanilla extract.
  • Chocolate option: mix ¼ cup cocoa powder with a little water into a paste and stir it through.
  • No ice cream maker? Freeze the mix and whisk it every 30 minutes until it sets.
  • Zero added sugar, so it’s kinder to blood sugar than store-bought ice cream.
  • High in fat, so a small bowl is satisfying. No seed oils or artificial fillers.
  • Easy to customise: chocolate, vanilla, strawberry or whatever flavour you like.

If you thought going low carb meant giving up ice cream, think again. In this video I make a rich, creamy sugar free ice cream from real ingredients, without a gram of added sugar.

It suits anyone eating keto, low carb, LCHF or diabetic-friendly, and I reckon it tastes better than the store-bought “diet” versions packed with chemicals and fillers.

Method in brief

  1. Gently warm the milk and cream.
  2. Whisk the egg yolks with the sweetener, then slowly whisk in some of the warm milk so the eggs don’t scramble.
  3. Return everything to the pan and stir over low heat until the custard thickens enough to coat the back of a spoon.
  4. Stir in the vanilla (and the cocoa paste if you’re making chocolate), then chill completely.
  5. Churn in an ice cream maker, or freeze and whisk every 30 minutes.
